Celebrity chef Robert Irvine wants healthier grab and go meals delivered to bomber pilots, maintainers, and other crews working on the flight line, where demanding schedules and limited access can leave airmen relying on energy drinks and packaged snacks.

“In most bases, but specifically Barksdale [Air Force Base] on the flight line where these maintainers and operators work, there’s nothing to eat,” Irvine told Task & Purpose. “There’s nowhere for them to go because it takes a while to get to somewhere to eat.”

The idea followed Irvine’s recent visit to Barksdale Air Force Base in Louisiana. During that trip, he met B-52 Stratofortress bomber crews and pilots who flew combat missions against Iran as part of Operation Epic Fury.

Speaking on stage at the Military Influencer Conference in Tampa, Florida, Irvine described crews operating with serious responsibilities and remarkably poor meal choices. “They have no food. They have a little little oven… and they’re drinking Monster Energy and things like this.”

Irvine has already partnered with the Army to overhaul enlisted dining halls using college cafeterias as a model and offering healthier choices. During the past year, the service opened new dining halls at four bases, with additional facilities planned.

His work has also reached other parts of the military community. For flight line personnel, Irvine said the goal is to provide “grab-and-go, healthy-style salads, poke bowls, that kind of stuff in those areas before Christmas.”

The proposal is not about piling luxury meals onto military menus. “But what we have to do is give them good food,” Irvine added.

Irvine’s team said the concept remains in its early stages. A spokesperson for the 2nd Bomb Wing confirmed that Irvine and his foundation visited Barksdale in September for an event attended by hundreds of airmen.

“We look forward to working with Chef Irvine and his team on innovative ways to continue improving quality of life programs for our Airmen,” the spokesperson said.

The grab and go proposal follows similar Air Force efforts to expand healthier options at prepared food kiosks and make takeout ordering available at dining halls. How Irvine’s concept would differ from existing flight kitchens remains unclear.

Those kitchens are located on Air Force bases near flight lines, but their menus can be basic. Chris McGhee, a retired master sergeant and former F-16 crew chief, said they generally offer more processed food through a fast food style line designed to move troops quickly.

McGhee said workloads and available resources often make sitting down for a meal unrealistic. Groups of airmen sometimes load into a truck, drive to a flight kitchen or dining hall, collect food, and return immediately to work.

“There’s not going to be an opportunity for a maintainer to sit down and eat because there’s not enough time in the day for that luxury,” McGhee said. “I had a long engine run; I would bring my food up in the cockpit with me because I was already sitting.”

Flight lines include runways, hangars, and other facilities where crews conduct aircraft maintenance and inspections. McGhee said the location and mission naturally restrict food access, especially because of logistics and operating hours.

“The flight line is more of a food desert than the base as a whole because the access to a broad food selection is necessarily curtailed because of the logistics and hours of operation and all these sorts of other things,” McGhee said.

Airmen who do not bring meals can turn to unit snack bars, which commonly carry packaged or processed products such as chips, muffins, and candy bars. Revenue supports unit expenses, including retirement gifts and unofficial outings, according to McGhee.

That revenue model makes perishable food difficult to maintain, particularly during night shifts when the snack bar may be the only available source. “When your snack bar’s primary goal is revenue generation, losing money is not a good thing and so what are the things that aren’t going to rot? Bagged, processed food.”
